With the April showers come some damp days that have many of us looking for some warm comfort food. Consider this basic quick bread made from flaxseed flour(2 cups), almond milk(to moisten), soaked chia seeds(you may also use eggs instead), pumpkin(1/2-3/4 cup of the meat), pumpkin seeds(handful), aluminum free baking powder(one teaspoon), coconut oil(2 tablespoons). If you want to sweeten it up, consider adding a natural sweetener, such as stevia. Bake at 375 degrees for about 40 minutes.
